ISLAND VIBES SMOOTHIE BOWL

Cool off with this delicious smoothie bowl which will make you want to dive straight in. It gets it’s colour from blue spirulina, an ancient-blue green algae that is packed full of vegan protein, as well as being high in fibre, vitamin B, manganese, iron and calcium. Don’t let the algae side of things put you off though, you won’t be able to taste it and it will supercharge your smoothie.


Recipe for Island Vibes Smoothie Bowl

Time to create: 15 minutes

Servings: 1

Ingredients

Smoothie:

  • 70g frozen banana

  • 100g frozen mango

  • 75-100ml of coconut milk

  • 1 tsp blue spirulina

  • 1 tsp maple syrup

Toppings:

  • 1 tbsp of coconut yogurt

  • Desiccated coconut and coconut flakes

  • Granola

  • Could also include strawberries and kiwi fruit

Method

  1. Pop 75ml of the coconut milk and the remaining smoothie ingredients into a blender and blitz until smooth. You want it to be a thick mixture, but if your blender is struggling gradually add the remaining coconut milk.

  2. Pour the smoothie mixture into bowl and smooth over with the back of a spoon.

  3. Carefully add a line of the coconut yogurt across the middle and then using a cocktail stick or skewer, make waves through the yogurt into the blue (all going in the same direction).

  4. Add the granola to create the sand and use the coconut (desiccated and flakes) to add to the wave like effect. Option to also add extra fruit here (I found it hard to know when to stop!)

  5. Put your favourite tropical tunes on, sit back and dive straight in!

Top tip: Make sure you use frozen fruit when you’re making smoothie bowl. This ensures the right level of thickness and helps when adding the decorations.
